Vanishing Oatmeal Raisin Nut Cookies

Ingredients:

  • 1 cup (2 sticks) margarine, softened

  • 1 cup finely packed dark brown sugar

  • 1/2 cup granulated cane sugar

  • 2 eggs

  • 1 tbsp vanilla

  • 1 1/2 cups all-purpose flour (high altitude: increase flour to 1 3/4 cup)

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 1/2 tsp salt

  • 3 cups quaker oats

  • 1 cup raisins

  • 1 cup chopped walnuts

Instructions:

Preheat oven to 350 degrees. Cream margarine and sugars. Add eggs and vanilla, beat well. Sift together flour, baking soda, cinnamon, and salt. Combine wet to dry ingredients, mix well. Stir in oats, raisins, and nuts. Drop by rounded teaspoons onto ungreased cookie sheet. Bake 9-12 minutes. Cool 1 minute on cookie sheet/move to wire rack. Cool Completely.

Bar cookies:

Press dough onto bottom of ungreased 13x9 baking pan. Bake 30 to 35 min.
