Ingredients
1 1/2 cups crackers such as Ritz, crushed
3/4 cup grated Parmesan cheese
1/4 teaspoon pepper
4 (1 1/2 pounds total) boneless, skinless chicken breast halves
2 tablespoons butter, melted
Instructions
Heat oven to 425 degrees F. Spray large rimmed baking sheet with cooking spray.
Combine crushed crackers, Parmesan cheese, and pepper in a shallow dish.
Slice each breast in half horizontally. Pound pieces between sheets of plastic wrap or use chicken tenders.
Coat chicken in butter, then dredge in cracker mixture. Press crumbs into chicken.
Bake 12 minutes or until golden and cooked through.
