My Favorite Blueberry Muffins

This is my favorite!

Ingredients
1 1/2 cups all-purpose flour
3/4 cup white sugar (can use brown too -- or a mixture of white and brown)
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 1/2 cups fresh blueberries plus 1 teaspoon flour
1/2 teaspoon vanilla extract (optional)

Instructions
Preheat your oven to 400 degrees F.  Grease muffin cups or line with muffin liners.  Combine the flour, sugar, salt, and baking powder.  Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup.  Mix this with flour mixture.  Sprinkle about 1 teaspoon flour over the blueberries and stir gently to coat the blueberries. Gently fold in the blueberries.  Fill muffin cups to the top.  Bake for 20 to 25 minutes in the preheated oven, or until done.

Note:  You can swap out the all-purpose flour for self-rising flour -- and then omit the salt and baking powder.
