Gigi’s Maple Walnut Cookies

This recipe was given to me by a retired extension home economist friend, Gwilli Brendell, from Haywood County.  It makes a nice addition to your Christmas cookie recipes.

Ingredients
1 box white cake mix
1/2 stick margarine, melted
1/2 cup brown sugar
1/3 cup milk
1 egg
1 1/2 cups walnuts, finely diced
1/2 teaspoon maple flavoring

Instructions 
Preheat oven to 350 degrees F.  Combine cake mix, milk, margarine, egg, brown sugar, and flavoring.  Beat until well blended.  Stir in nuts and mix well.  Drop by rounded teaspoons or medium size cookie scoop.  Bake 11-13 minutes, until lightly browned.  Do not over bake.  Cool on cookie sheet for 2 minutes then remove to wax paper to cool.

Maple Icing
1 1/2 cups powdered sugar
3 tablespoons melted margarine
1/4 cup maple syrup

Instructions
Mix 1 cup sugar with margarine and syrup and beat until smooth.  Add remaining sugar until frosting reaches spreading consistency.  Frost cooled cookies.  Yield:  3 1/2 dozen.

Note:  I usually bake for 12 minutes.  The cookies won’t look done but they are.  If you bake them until they are brown they will be very hard.
