Ingredients
2 cucumbers, peeled and sliced thin
1/2 cup mild onion, sliced thin
1/4 cup water
2 tablespoons sugar
1/2 cup white vinegar
Salt to taste
Instructions
Salt cucumbers to taste and let them set for 1/2 hour.
Rinse cucumbers well under cold water and pat dry.
Add the onions and mix well.
In a separate bowl, combine the water, sugar, and vinegar. Pour this mixture over the cucumbers and onions.
Cover and refrigerate for at least 4 hours.
To serve, lift cucumbers and onions out of the marinade onto a pretty dish.
Makes enough for about 4 people.
