INGREDIENTS
4 or more russet potatoes, unpeeled and washed well, lightly prick with fork
1 tablespoon vegetable oil
Salt and pepper
INSTRUCTIONS
1) Adjust oven rack to middle position; heat to 450 degrees F.
2) Dissolve 2 tablespoons salt in 1/2 cup water.
3) Place potatoes in bowl with water and salt and toss until moistened.
4) Place potatoes on wire rack set in a rimmed baking pan.
5) Bake until largest potato registers 105 degrees F. (about 45 minutes to an hour).
6) Remove potatoes from oven and brush tops and sides with oil.
7) Bake 10 minutes more.
8) Remove potatoes from the oven. Make an X in each with a paring knife
9) Using a dish towel squeeze potato from each end to push flesh up and out.
