Microwave Peanut Brittle

  • 1 cup raw peanuts

  • 1 cup sugar

  • 1/2 cup white corn syrup 

  • 1/8 tsp salt

  • 1 tsp butter

  • 1 tsp vanilla extract 

  • 1 tsp baking soda

1. Stir together peanuts, sugar, syrup & salt in large bowl. Place in microwave & cook on high 7 minutes, stirring well after 4 min. 
2. Add butter & vanilla to syrup, blending well. Return to microwave & cook 1 min more. Peanuts will be lightly browned & syrup very hot. 
3. Add baking soda & gently stir until light & foamy. Pour & spread mixture quickly onto lightly greased (flexible) cookie sheet. Let cool 30 min. When cool, break into small pieces.
