Stuffed Green Peppers

“This is one of my grandma’s recipes . Many of her recipes are mostly Hungarian but she was an amazing cook. A lot of them came from my great grandmother who was born in Hungary. “
Remove stem sections from 6 large green peppers, cut in half. Wash outside and inside and remove all seeds and membranes. Cook peppers in boiling salted (3 tsp. salt) water for 5 minutes. Drain.
Sauté 2 medium onions, chopped, in 4 1/2 Tbsp. of butter.
Mix Together:
2 lb. ground beef
3-4 cups cooked rice (1 cup raw rice, in 2 cups water, bring to boil, summer 12 minutes)
3/4 of the sautéd onion
2 tsp. salt
1/2 tsp. pepper
1/2 tsp. paprika
1 can (8 oz.) tomato sauce
Stuff peppers, micely rounded, with the meat mixture. Place in oblong baking dish.
Sauce:
To the rest of the onions add:
1 can tomato soup
1 can tomato sauce (8 oz.)
1 pt. (2 cups) tomato juice OR 2 cups fresh or canned tomatoes
Simmer for 10 min or longer if fresh tomatoes are used (until smoth).
Pour over peppers, baked covered with foil in 350 degree oven for 45 minutes.
