Oven-Fried Chicken

  • 1 cup unseasoned bread crumbs

  • ½ cup grated parmesan cheese

  • ½ tsp. salt

  • ½ tsp. freshly ground pepper

  • 1 clove garlic, minced

  • 3 Tbsp minced parsley

  • 6 Tbsp. butter, melted

  • 1 (2½ - 3 lb) chicken, cut into serving pieces

  1. 1.    Heat oven to 375 degrees.

    2.    In a shallow bowl thoroughly combine first 6 ingredients.

    3.    Pour butter into another shallow bowl.

    4.    Dip chicken into butter, then roll in crumb mixture, shaking off excess.

    5.    Arrange in lightly greased baking pan without crowding.

    6.    Bake 1 hour or until golden.
