Vidalia Cheese Pie

“This is one I put in a cookbook that I did with two other teacher friends many years ago. The cookbook was called ‘Three Friends in Hog Heaven’. It has been an easy go-to for many years. Today it would probably be called a quiche.”
1 large onion
1/2 cup butter or margarine
3/4 cup grated sharp cheddar cheese
3/4 cup cheese Ritz crackers crumbled
2 beaten eggs
1 cup milk
1 tsp salt
1/8 tsp pepper
1/2 tsp Italian dressing
Instructions:
Peel onion and separate into rings. Should have three cups.
Sauté inion in 2 tsp. butter, until soft. Stir in cheese.
