Vidalia Cheese Pie

“This is one I put in a cookbook that I did with two other teacher friends many years ago. The cookbook was called ‘Three Friends in Hog Heaven’. It has been an easy go-to for many years. Today it would probably be called a quiche.”

  • 1 large onion

  • 1/2 cup butter or margarine

  • 3/4 cup grated sharp cheddar cheese

  • 3/4 cup cheese Ritz crackers crumbled

  • 2 beaten eggs

  • 1 cup milk

  • 1 tsp salt

  • 1/8 tsp pepper

  • 1/2 tsp Italian dressing 

Instructions:

  1. Peel onion and separate into rings. Should have three cups.

  2. Sauté inion in 2 tsp. butter, until soft. Stir in cheese.

Crust: Mix together the crumbs and tsp. of melted butter. Press into pie plate. Bake at 350 degrees for 5 minutes. Put onion mix into crust. Combine eggs, milk, and seasonings and pour over onions. Bake at 375 degrees for 30 minutes. Makes 6 servings.
