Cream of Green Bean Soup
Submitted by: Kristee Kaye
2 Tbsp. butter
3 Tbsp. flour (rounded)
1 cup liquid from beans or 1 cup milk
1 Tbsp. salt
1 small grated or chopped onion
1/8 tsp black pepper
1/2 tsp paprika
1/2 pt. sour cream
3 cups of green beans
You may add 1 tsp. vinegar at the end (optional)
Cook green beans.
Melt butter in a saucepan. Add onions and sauté until clear.
Blend in flour and brown lightly. Add black pepper and last of all, paprika (because paprika burns quickly).
Gradually add milk of bean liquid (from booked beans) stirring constantly until smooth.
Add salt and cook until thickened. Add this mixture to cooked beans in water and boil together for about 10 minutes until well blended.
Add sour cream (to blend well, first put small amounts of soup in sour cream, then add to soup.) Add vinegar (optional).
